Bob is humble about most everything, but it is understandable even he cannot hide his giddiness around the mastery he has developed here. Clearly the product of an obsession to take these meats to the next level. Bob's meats are the most succulent that I know, and they all have that subwoofer of flavor depth that only great big meat has.

It's actually pretty good.
